

We are About sourdough...and pizza!!!
The Story
In 2011, I was living in Singapore and working in finance. I was continuing a Friday night tradition of pizza and a movie. I had ordered a couple 12-inch pies from the closest Pizza purveyor that I hadn't yet tried. After many disappointing orders, I had lowered the bar quite a bit for these. The pizzas were so bad, I could not make it through the movie. I paused the movie and started looking online for how to make as close to authentic pizza as I could at home.
Lucky for me, it was right at this time that some famous Pizza Chefs in the US had started putting out books and websites. I found The Pizza Bible by Tony Gemignani and was absolutely hooked.
Around about that time, a friend had brought me some sourdough starter to make — of all things — pancakes. I had found Tim Ferriss and heard a bit about the health benefits of sourdough. After achieving the best sourdough white bread that I had ever had, I set about including sourdough in my pizza dough.
Once I realized the flavor, texture, and health benefits of doing sourdough, there was no going back. I then started a pizzeria that took off, and ended up selling it and moving to Japan. That story is a bit long for here, but suffice it to say that I am VERY far down the rabbit hole.
